- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 4 garlic cloves, minced
- 1 cup heavy cream
- ¾ cup chicken broth
- ½ cup sun-dried tomatoes (in oil), chopped
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 12 ounces penne pasta
- 1 tablespoon chopped parsley (optional for garnish)
- Crushed red pepper flakes (optional)
Instructions
- Bring salted water to a boil. Cook penne until al dente (about 8–9 minutes).
- Reserve ½ cup of pasta water before draining.
- Toss shrimp with salt, pepper, paprika, and garlic powder.
- Heat olive oil in skillet. Sear shrimp 2–3 minutes per side until pink.
- Remove and set aside.
- In the same pan, add minced garlic. Sauté for 30 seconds.
- Pour in chicken broth and deglaze. Stir in sun-dried tomatoes.
- Add heavy cream, Italian seasoning, parmesan cheese. Simmer for 4–5 minutes until thickened.
- Add cooked pasta to sauce. Toss to coat.
- If too thick, add reserved pasta water a bit at a time.
- Return shrimp to the pan and gently stir.
- Top with parsley and crushed red pepper if desired.
- Serve with garlic bread or a fresh side salad.
