- 1 medium head green cabbage, cut into 8 wedges
- 3 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- Optional: crushed red pepper flakes or smoked paprika
Instructions
- Remove outer leaves and trim the stem slightly
- Cut cabbage into 8 equal wedges, keeping the core intact
- Whisk together honey, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper
- Stir in olive oil until fully emulsified
- Arrange wedges cut-side down on a parchment-lined baking sheet
- Brush generously with honey mustard mixture
- Roast at 425°F for 20–25 minutes, flip and roast another 15–20 minutes until golden brown and tender
- Drizzle any remaining glaze
- Sprinkle with red pepper flakes for heat or parsley for freshness
